Baked Tuna Omelette

Serves: 6
Preparation time: 15 to 30 minutes
Great for a quick, easy family meal.

Ingredients
1 x 425g tin tuna
12 eggs, beaten
1 punnet cherry tomatoes

2 medium zucchini, sliced
1 bunch spring onions, chopped
6 large mushrooms, sliced
1½ cups grated mozzarella cheese

Method
  1. Combine all ingredients in a large bowl.
  2. Pour mixture into a lightly greased baking dish.
  3. Sprinkle some extra grated cheese on top.
  4. Bake at 180°C for about 25 minutes or until set.
Recipe notes
For a variation use 6 eggs and 1 cup of cream.
Grated carrot and corn kernels can also be added.
