Indian style grilled chicken

A favorite summer cooking method, refreshing and relaxing. Cooking outdoors brings out the best of the food preparation and enticing aroma of our favorite foods. The wonderful flavors of grilled foods and relaxing atmosphere  are enhanced by cooking with the best and healthy ingredients. Here is a recipe for a wonderful  grilled chicken-Indian style that uses fresh herbs and spices with use of minimal or no oils.

Ingredients:
1/3 Cup Freshly Squeezed Lemon Juice
1/2 Cup Non Fat Yogurt (nicely blended with no lumps)
2 Teaspoons Minced garlic
2 Teaspoons Minced ginger
2 Teaspoons freshly ground cumin (Toast the seeds on hot skilled without any oil and   grind )
1 Teaspoon Ground Coriander
1 Tablespoon Hot spice (Indian blend of various spices)
1/2 Teaspoon Curry Powder (optional)
1/2 Teaspoon Cayenne Pepper (can add more to increase the heat)
1/2 Teaspoon Paprika
Salt to Taste

2 Tablespoons Fine Chopped Cilantro (optional)
1 Table Spoon White Wine Vinegar (optional) 
1 Teaspoon Red Food color (optional)
2-3 Pounds of Chicken (Breast or Drumsticks)

Cut the chicken (if using chicken breast) into small cubes. Combine lemon juice (and vinegar if using) and other dry spices in a container and pour over the chicken breast cubes or drum sticks. Add color and coat the chicken well. Add yogurt (well blended) and cilantro (if using). Coat the chicken will with yogurt lime juice marinade and let it sit covered in the refrigerator for an hour. Grill the chicken on medium to high heat until fully cooked. Serve with wedges of lemon.

Note: This marinade works well with other meats like beef and lamb as well.
