Ingredients
2 (8-ounce) chicken breasts
2 ounces sliced prosciutto ham
1 ounce fresh spinach, rinsed and cleaned
2 ounces lump crabmeat
Stax Seasoning to taste
4 ounces hollandaise sauce (see recipe under sauces)
Method
1. Lightly pound chicken breast and season.
2. Place spinach to cover chicken. Add prosciutto evenly over spinach. Add crabmeat and roll the breast to make a roll.
3. Season with Stax Seasoning and bake at 350 degrees F for 12 minutes.
4. Remove from the oven and slice into medallions.
5. Top with Hollandaise sauce and serve immediately.
