Tomato and Egg Bruschetta

2 large tomatoes, chopped
6 slices Fletcher's Leaner Than Bacon, cooked and diced
1 teaspoon Italian seasoning
1 teaspoon finely minced garlic
   Salt and pepper, to taste
8 thick slices French bread, toasted
2 tablespoons olive oil
4 ounces cream cheese, softened

4 eggs, hard cooked and sliced
3 tablespoons rated Parmesan cheese
   Fresh basil

Preparation Instructions:
Preheat oven to 400 degrees. Drain liquid from tomatoes. Mix with Leaner Than Bacon, Italian seasoning, garlic, salt and pepper. Brush both sides of bread with olive oil. Spread cream cheese on bread slices. Top with tomato mixture. Arrange egg slices on top. Sprinkle cheese over. Bake about 6 to 8 minutes until heated through. Garnish with basil. Makes 4 appetizer servings.
