2 cups white beans
1/2 tsp baking soda
1/2 lb bacon, uncooked in small pieces
3/4 cup maple sugar
4 cups water
2 tsp salt
1 med yellow onion,sliced
Soak beans overnight in water to cover. Drain, add fresh water and 1/2 tsp. baking soda; cook until skins burst. Drain.
Put beans in a glazed clay pot (or casserole). Stir in the remaining ingredients. Cover tightly. Bake 5 hours or longer in a 325° oven.
From time to time check on the beans. If getting watery remove the cover for a while; if not enough add boiling water.
