Ingredients:
1 Package long grain and wild rice mix
1/3 cup vegie oil
¼ cup Balsamic vinegar
1 ½ teaspoon Dijon Mustard
1 clove garlic, minced
3 to 4 dashes of Tabasco
2 cans solid white tuna packed in water, drained
1 large carrot, shredded
½ cup raisins
5 scallions, sliced
½ cup pecans, chopped
Method of Preparation:
Cook rice according to package directions; allow to cool for 15 minutes. Place in a good sized bowl and add the tuna, carrot, raisins, scallions and pecans. Whisk together the oil, mustard, vinegar, garlic and Tabasco; pour over the rice mixture and toss well. Cover and refrigerate ‘til chilled.
